I'm trying to figure out a quick automated way to measure the percentage of free fatty acids in mixed in with triglycerides, so as to avoid having to perform a titration. I thought that the electrical conductivity of free fatty acids might be greater than that of triglycerides, and therefore this percentage could be determined electronically. Does anyone have any conductivity numbers for any fatty acids?
