EPS Block Mold Steam Accumulator Dims

I work in the EPS industry and we are purchasing a new block mold. I am responsible for the steam accumulator. I am looking for some guidance on the dims of my accumulator. I have the volume sorted. The water's surface area though, I still have questions. Minimum volume needed is 668 ft³. I can get the tank made 8' x 15' @ 754 ft³ with a surface area of 120 ft². Or, I can get
6' x 25' @ 707 ft³ with a surface area of 150 ft². For the EPS industry I need ALL the volume of steam in a SHORT amount of time with plenty of recovery time after. My question is this, how important is the surface area (Flashing Area) for my specific needs? Any help is appreciated.
