digester sludge scum monitoring

We are investigating applications of an Endress Hauser guided radar for monitoring scum accumulation in side of our digesters because we want to digest fats, oils and grease. We are begining with a verification study by building a windowed tank to be filled with sludge and fats, oils and grease (scum) to determine accuracy. We do not know if there is a large dielectric difference in the sludge/scum or how much foaming will occur.
Has anyone tried similar applications?
