We are presently working on two paint systems, one based on epoxy resin chemistry while the other on linseed oil to be applied on mild steel panels.
Will the coatings cure in nitrogen atmosphere?
which should be the preferred choice please.

Please your advise and experience is highly appreciated thank you.

Whatever happened to good old-fashioned experimentation?
I think you'd get more reliable answers by getting a tank of Nitrogen and doing some hands on work.
Seriouly. That's what I'd do.
