What is the maximum coverage area of 6" riser and 8" risers.
The building is a shopping mall(Ordinary hazard Group 2) and system has multiple risers.

System size is not dictated by the riser size. A 6" and 8" riser can have the same system size. The system size is partially driven by your system type. So I guess the first thing you should do is read through Chapter 7 of NFPA 13.

If you are outside of the US, there are a lot of pipe schedule systems. As such, you would need to look at the pipe schedule and see what is permitted. Otherwise, as stated above, system riser has NOTHING to do with pipe size in a calculated system.
