A quick one for one or two switches and no passive R/C involved would be MAX6816 or MAX6817 available from places like Digi-Key.
Otherwise, R/C type "monostable multivibrator" or "one-shot" circuits made from 555 timers, or ICs designed for this fuction (74xx123, 4538B, etc).
