burner injector specifications

Hello everybody!
I'm looking up for any specifications regarding the gasburner injectors used on cooker machines. I want to learn more about how to calculate and chose the optimal section of these nozles. Please help if somebody know where can I find such a documentation.

I built some custom commercial griddles (gas fired) for a customer some time ago. Are you using propane(LP), natural gas, or some other fuel ? Are you pressure assisting the flow of fuel, or using line pressure only? If you are using a standard gaseous fuel, call up your local gas company and ask them to size the nozzle orifice according to your btu requirement and the number of nozzles. I found that nozzle size is not nearly as critical as you'd think, because you will probably need a valve to meter your flow anyway, and thereby having some control and adjustability of the btu output.
