Best method/resin process for high gloss finish on carbon fiber

I am just starting an automotive project where I am cosmetically covering some parts in carbon fiber.
What is the best epoxy resin process to get a high gloss that is UV resistant and won't yellow? This is going to be used on interior (and some exterior) trim pieces that will be exposed to the sun, so I'm sure they'll take a beating.
Won't most of the vacuum/wrap processes leave a matte/unfinished look on the end product?
