I am looking for a way to extend expiry date for "alfajores" (which is a product formed by 2 cookies, filled with milk syrup (similar to caramel), and covered with chocolate). We were suggested to use (in addition to increasing higine to almost sterile levels), a spray of propionate. Is anyone familiar with this? Can you send suppliers or contact information or advice?
