I am dealing with fuel lines for racing application and I often find reference to "dash 4" or "dash 6" fittings; I cannot find any literature about this kind of threaded fitting series; I need some table or chart with dimensions and explanation.

It actually does not depends on the size of the system but only on fuel bulk modulus and fuel thermal expansion coefficient i.e. Dp/DV=B (bulk modulus) DV/DT=Ct (thermal expansion coefficient) therefore Dp=B*Ct*DT
You can simply calculate the Dp knowing the two parameters B and Ct
