We often do similar models that only have minor changes in the design process. Since we build prototypes, I need drawings of each version. We do not use configurations due to how we track projects and their revisions but I was wondering how can I create my second model from the first and have my drawing sheet not linked to the first model but start from that point since I have placed many dimensions in the first drawing. I have tried to "insert, model items" but the dimensions come in all over the place and usually it takes longer to fix this. Am I missing something obvious or is there an easy work around?

Open the original drawing and "Save As" to the new part.  When doing the "Save As", click on the "References" button to save and rename the referenced part.

An alternative is to use SolidWorks Explorer.

Open the drawing in SW Explorer, then select Edit > Copy Document > Copy children, browse to a destination folder, check mark which parts are needed to be copied & then Apply

It's personal preference which method you use, the end result is the same.

The other way is to open up the drawing and the part

1) File\Save As on the Part
2) Put it in the proper location and change the name
3) It will give you a message that there are other files referencing this model are you sure? (or something to that degree) Answer with - Yes
4) File\Save As or Save As Copy on the drawing
5) Find the new location and give it a new name.

Close all the files and reopen up your new drawing. It will reference the new file you just created.

This method is dangerous but it does work. It's dangerous because if your paying attention to what your doing you will make or break the wrong reference.

When I was trying to copy it through SW Explorer, the part does not find the drawing (as a child). That is why I had the question. I didn't think to browse for the drawing and the "copy children" would find the part.

I like The Ticks answer as well. I try to use SW Explorer if at all possible - just a habit.

Scott, I'll try your way to see if that works as wekll, I just need to finish the project first.

Browse to the drawing in SW Explorer then do the copy.  That will allow you to create the new drawing, assembly and model at the same time.  Works really well.
