We do a lot of formed plexiglass and sheet metal parts.  When we create a drawing and have a face-on view of a non-right-angle bend, there is nothing displayed where the bend is.  Is there any way to show some lines along the bend line so it doesn't just look like one common face?

Are you looking for the tangent edges of the bends?  If you right click to edit the view there is an options tab, turn on the visibility of the tangent edges.
