I have long been bemused by the word "escapee" (and a few other special "-ee" words.)

Generally, the "-er" (or sometimes "-or") suffix is used to denote the active person or thing which carries out the action, while the "-ee" suffix generally refers to the recipient/subject person or thing. E.g., think of "lessor" and "lessee", "employer" and "employee", "trainer" and "trainee", etc.

Logically, therefore, a jail-breaker should be known as an "escaper", and the "escapee" would be the prison itself!
