Is it possible to use a frequency drive to make a single phase electric motor run at variable speeds and would you run into trouble with the xtra phse from the drive with no load?

You can use a single phase VFD on certain types of single phase motors, check out Anacon Systems.

Keep in mind that you should not use them on capacitor start msingle phase motors, which unfortunately is the vast majority of them.

Yes, that is why you will not be able to use a 3 phase VFD on a single phase motor.

In addition to not being able to use capacitor start motors, you also can't use split phase motors with a VSD, or not below a certain (motor-specific) frequency, because the reduction in speed will cause the centrifugal switch to close and energise the starting winding. This winding, being short-term rated, will then overheat and damage the motor.
