I am consulting to a cherry processing plant for marchino cherries. They are sulfited to about 35 ppm as S03.  The pH is at or near 3.5  They wish to market these and package them faster than the present rate of long exposure to deplete the sulfite.  I am suggesting sparging the tanks with air as a means.  


Any suggestions.  The whole process is necessary to fit into FDA regs.

Addition of Hydrogen Peroxide can be used for sulphite reduction.  Without knowing the process etc., it's difficult to say whether it might be an alternative or not, but it would certainly be a 'safe' means of doing this from FDA point of view, provided there was not an excess of peroxide.
