If you manage to reduce the time of the whole project by a couple of days, how do you actually show this change of time visibly on the gantt chart??

It can be a bit complicated, depending on what you're trying to do.

Make use of the Gantt Chart Wizard on the formatting menu, use one of the custom baseline modes.  You'll need to set the baseline start/finish as well as actual start/actual finish.  The format bar styles will show what the chart is actually presenting.
