I would like to find out typical projects that Industrial Engineers have worked on or need to work on in order to gain work experience credit for Professional Engineering status.

One source would be to contact the National Society of Professional Engineer office (www.NSPE.org). They are resources for information on contacting state societies. Many states are looking into the need to require a PE license for industry. It is good to see people like yourself pursue the PE license and encourge the need for engineering professionalism in industry. Talk to your enployeer about your needs and license goals.
