Hi!

why v engines are used in multistage gas compression?

why the extended kind of piston is used in this compressor

system?

If you are talking about integral compressors then both v and in-line are used.  See the IR (old Clark) TLA series for example.

For high speed engines (approx 1000 rpm) I would think that the economics of a shorter block for a v engine is the primary reason.

Think about the crank angle with a v.  The second stage is drawing the majority its charge when the first stage is at the end of it exhuast cycle.  This will reduce the amount of gas storage in the interconnecting pipe between the cyclinders.  Thus such timing can be done with only one offset on the crank shaft.
