I'm working on a pipe replacement program and we have a lot of 6"x2" reductions (mainly after fire hydrants).  ADIP does not list this as an available fitting... so is this a fitting that can be easily purchased by a contractor (possibly by another manufacturer) or should I just use a 6" tapped plug with a threaded connctor?

Yes 6"x2" must still be available, and I have seen them mostly for firewater applications as you mentioned, with threaded ends. Newly installed, so they must be available somewhere. Call and shop around for them at different suppliers. Some manufacturers do make "odd" size and shape fittings.
If you are going to have to install 6" pluggs make sure if there is anything against it in the NFPA codes (which I doubt at this point) and if the pressure rating is correct for the fiting.
