Anyone have any ideas on how to model a U.S. nickel?

Jeff,

Are you designing a Candy Machine? The cylinder would be easy, and the text could be made along a construction curve in a Extrusion Profile. If you are serious about getting an accurate model ther are some scasnning devices that could accurately map out Jefferson.

Yep, send the nickel to a vendor for laser scanning, and ask for an IGES file.

You could map a jpeg of a nickel onto the face of a very simple extruded protrusion, it would look okay in full colour mode but would just be a blank disc in wireframe. I am not sure about scanning in the profile of a coin, surley it is entering the realms of counterfitting!

It is only counterfitting if you do both sides and scale it and pass it off as money.  You will get into big trouble if you do that.  It may be better worth your time if you did a more rare coin, ha ha ha.

There are several methods. light scanning is the one I have used most.  Atos White Light Scanner®, It would work well for this purpose. Perceptron® laser scanner.
I don't have any interest in ADC, but I have used them successfully in the past.

Again you get a buch of iges surfaces and then you make a cut using the surface quilt.

I bet you will not even have to send them a sample.
