As a recently graduated electronics engineer, I know almost nothing about motors (DOL, DOL reversing, star-delta, inverting, etc), but would like to.
Are there any web sites or recommended reading that is strictly for beginners? I have tried numerous searches, but almost all sites assume a more fundamental knowledge than I have.
Can anyone explain the types I listed above in laypersons terms?
Any help would be greatly appreciated.

I am also lookin for sites on electric motors, more specifically induction motors, explained at an undergraduate level.
 If anyone knows where i can find such.... gimme a holla.

  Contact the major motor manufacturers.  At one point, I had some literature from Lincoln motors with exactly what you are looking for. Check thier web sites.
  Some of the major motor manufacturers:  Lincoln, Baldor, Leeson, Reliance, ABB, WEG, GE.  One of them is bound to have literature on thier web sites.

That site contains a great overview of the different starting methods presently available (those you mention plus soft starters and variable speed drives) and much other practical & useful information.
