I'm attempting to determine the mass flow rate of 30 psig steam through a 3/4" diameter hole to atmosphere.  What would be the best equation(s) to use?  Assume there is an infinite supply.

you need to be dealing in terms of absolute pressure and you need to specify the quality or the super heat...

representative disch. coefficients are in almost any process/mechanical handbook...look for it

The choked flow of compressible steam through a square edged  hole is a function of the speed of sound ( which is primarily a function of the steam temperature)  in the upstream steam and the ratio of the hole diameter to the thickness of the vessel [ Cd= F( t/d) ].

For most practical ratios of t/d, Cd= 0.83
