Planes rather than faces are best used for mating parts in assemblies, because faces often change.
Moving planes can be used for different configurations of the same assembly, a pneumatic cylinder for instance with forward and return positions.
I often name one of the planes "floor" for instance.

Easiest example to see it involves a Revolve. Make a Revolve using some plane. See where it is? Now move the Plane back 3 inches or whatever. The Revolve stays where it is. Now make another Revolve using the same Plane (that just moved). Your next Revolve is on the same plane as the first one, before you move the Plane.
To me, moving planes may just confuse you, or it is a nice way to trick a co-worker into wondering what the hey...
Ohh, did you move one, and you want to put it back? Well, then just right-click on it and choose Autosize. There you go...

Planes can be used for many purposes and it is true that sometimes planes or surfaces may be more appropriate for apparently similar purposes.
What is you exact application and problem in this case?
3/4 of all the Spam produced goes to Hawaii - shame that's not true of SPAM also.......
