(OP)
We are extending the kitchen wall out 9'.  The ceiling is 8' and we feel the beam extending down from the ceiling will detract from the view.

I want to install the beam in the attic supported by the wall on each end. I am thinking that I can hang the ceiling joist from the beam and cut a bird's mouth in the rafters and let them rest on the beam.

The ceiling joist and rafters are 2"x6". The roof pitch is 5/12.

Is this even remotely feasible?

Yes its feasable.  First determine the tributary area.
The loading is then determined from various load cases.
The beam is sized from the bending and deflection limits.  Then the supports and attachment details are worked out.

Get a structural engineer to look at it on site.

or maybe even a Professional Engineer.

I stand corrected, I keep forgetting that a PE (structural) is the required person in the US. In Australia, we go to a consulting Structural Engineer, such as myself.
