Surfacing provides a rich set of curve and surface creation tools for lofting, sweeping, and blending surfaces, giving you excellent local and overall control of surface shape. Not only can you create your shape, but you can also easily make design changes because relationships between geometry entities, such as surface tangencies, are maintained throughout the design effort. Advanced fairing operations help you remove bulges and achieve excellent local shape control of free-form surfaces.

Do you mean "surfacing" as opposed to "solids"?  If you are using SE you know that solids are basically 3D shapes defined by their corner points, curves, extrusion lengths or paths, etc.  Surfaces on the other hand are just that - surfaces of parts.  It takes six surfaces to define a cube.  Surfaces are also defined by points, and the points can be related to each other using equations.  Depending on how many points are used to define the surface, you can generate some very complex shapes using surfaces that would be extremely hard or impossible to create using solids.  Think of a surface as similar to a wire mesh.  You can adjust the shape of the wire mesh by pulling up or pushiung down on the cross points of the wires, and the rest will follow along.  Similarly you can adjust the shape of a surface by moving points and having the rest of the surface adjust accordingly.
