Does anyone know of a source of a materials list(generic names) showing the compatibility of materials for two shot injection moulding?

Nope!

What I would suggest is that you ask back on this fourm if anyone has ever molded the materials that you are contemplating.  There are quite a few highly experienced people that will probably have an answer to your question.  Regarding compatability and molding issues.

Certainly, Polyurethane over Nylon 6 is possible. Bayer published a technical bulletin about it about 15 years ago. Also, vulcanised PP/EPDM (Santoprene) over PP is definitely done.
I expect some other combinations should be possible, these being:-
Other PP elastomers  with PP
PBT block co-polymerssuch as Hytrel and Arnitel  over PET or PBT.
PU over other nylons.
