I have created an assembly model comprising approx 15 parts. I now want to mirror several of the parts about a central part to create a symmetrical assembly. I am struggling to find anyway of doing this. I seem to have no access to the MIRROR icon from within the assembly modelling environment. Surely I don’t have to copy all the parts and constrain them all again??

As far as I know there is no mirror command in assembly.  You could try using patterns centred on the central part to "mirror" the parts.  If the parts are not equally distant you'd need more than one pattern and it might be easier just to insert and constrain the parts individually.

If parts are mirrored in two dimensions you could try a circular pattern.

Another option if you're not concerned about having the parts in a bom or parts list is to insert the assembly into a part file and then mirror it there (provided you're mirroring entire assembly).

If you want to create a mirrored part, create a new blank part and select Insert-->Part Copy.  In the Part Copy options, you'll get the chance to create a mirrored part and choose the correct (part) plane to mirror about.  You will then have to assemble this part individually.

There is a VB macro that is delivered with SE called "Mirror Assembly.exe".  It will be located at "C:\program files\solid edge v12\custom\MirAsm".  Haven't used it myself, but supposedly will allow mirroring of an assembly, and you can chose parts that are either mirrored or rotated.

Two possible ways

Why not open a new assy, set the first assy as a subassy in the new file. And that subassy again in the new assy?
Your new assy contains also 2 times the same subassy.

Create a circular pattern and use 180 deg.
