How do I get my SEW surfaces function to show me where the gaps are?
OK or APPLY makes no difference, nothing is showing up.

Try the "examine geometry" command (menu -> analysis -> examine geometry), turn on the "sheet boundaries" check, window select your entire model and press the "examine geometry" button. If sheet boundaries are found (gaps between the sewn sheets) there will be an option button in the examine geometry dialog that you can turn on to highlight the gaps.

That's a bug that's fixed in NX11.0.1. Download the NX11.0.1 Maintenance Release to update.
