Aircraft Pitch and Roll Transfer Functions

Hello everybody,

I'm currently designing an autopilot using PID loops for a custom RC plane. As part of the design process for the PID loop, I need to test the coefficients before I fly the plane to make sure it is stable. Unfortunately, that means that I need a way to characterize my plane as a set of transfer functions (one for pitch and one for roll) to simulate the "plant" part of the PID control loop.

Do any of you have equations for these transfer functions, or possibly have any resources that explain how to find them? I'm electrical engineering and not aerospace, so I might not know some of the terms y'all might use.
