Hello,
I have a geared motor producing about 250nm of torque. This has a typical shaft (round with the ridge/lip), which is 25mm.
I then need to connect this to a shredder shaft which is 14mm (this is a round shaft with a flat spot - see attached).
How can i connect the two together?
I saw some HRC couplings, but these seem to be for shafts that have this ridge/lip on both devices.
Any advice how i can connect the two (ideally with some sort slight misalignment protection)?

What is wrong with a flexible coupling? There are all sorts of these things in the catalogues, rated for your torque. The worst case is that you will have to bore one of the holes to the correct diameter.

I guess I could remove the ridge part from the shaft. Although could it handle 250nm of torque on a round diameter coupling? Doesn't seem like it has much to grip onto on the shaft and could slip?

I am not sure what you mean by "ridge/lip". I see a flat on your shaft. This is for a set screw in your coupling. Set screws dig holes and create burrs in whatever surface they clamp on to. In my experience, set screws fail rather easily. A friction clamp couple with big screws will be way more reliable.
Look through the coupling catalogues. Probably, you can find something with your two shaft bores.
