Tota123....not sure where you are located, but many colleges and universities throughout the world have courses in construction processes and techniques. These courses are usually within a construction management, civil engineering or civil technology curriculum. I teach such a course at a regional university in the US.

The textbook I use is "Principles and Practices of Commercial Construction", 9th Edition. For disclosure, I am the principal author of this book, but it is the one I teach from. There is another textbook that also has good information and I have also used it in my classes. It is "Fundamentals of Building Construction: Materials and Methods", 6th Edition, by Edward Allen.
