I have subtracted a solid from a solid (2 different colors) and the surface remaining had to color of the subtraction tool. The project I'm working on now, I'm using a sheet body to trim and would like to have the solid surfaces that are trim change color automatically. Is this possible?

Yes.
Go :Preferences - Modeling - Display properties for new geometry - For Boolean faces = Tool body.

There are two other settings related to the display of new geometry, pretty self explanatory i think.

The faces resulting from a boolean operation can inherit the color from the tool body, but I don't think there is a similar option when using a sheet body to trim a solid.
