When designing sprinkler systems for residential (multi-family), does the placement of the sprinkler head in the kitchen area, does the 7'-6" standard max distance be taken from the wall behind the kitchen counter and cabinets or can it be taken from the face of the kitchen cabinet?

Must be to the wall. You can use residential sprinklers, which gives you essentially extended coverage spacings.. up to 20' for residential pendents.

Typically they are used in small rooms as defined by NFPA 13. Therefore, area per sprinkler for applying 0.1 is room area / # of sprinklers. Then, compare to data sheet.

So, if you have a 600 sq ft room with 3 sprinklers, the area per sprinkler for 0.1 is 200 sq ft. You may as well max out the sprinklers at 20' spacing because the listing of the sprinkler is typically 20 gpm for 20' spacing.
