This has to be the number 1 most frustrating thing in the known Universe EVER (besides not naming Boolean operations Boolean operations)!
OK I'm exaggerating but does anybody actually know why Solidworks sometimes merges coincident points but not at other times?
Secondly how to I merge points? Trimming back isnt working by the way & for the life of me I cant find a merge option or fix sketch tool.

If I recall correctly from your recent posts you are somewhat new to SolidWorks and more experienced in other CAD systems. I know that frustration of knowing how to do something in one system, but not in another. Often it is just an issue of nomenclature. With all due respect I think you would be very well served to invest a little time in going through the SolidWorks tutorials (Help -> SOLIDWORKS Tutorials). Since you apparently know how to model in 3D you will be able to breeze though these very quickly, but you will discover how SolidWorks names things and does things and it will dramatically reduce your frustration and increase your throughput.
With regard to your particular issue it would be so much easier for us to help you if you could post the file to show us exactly the issue you are having. Merging endpoints is a very easy thing to do as is "fixing" an endpoint or entity. You state that trimming does not work, but trimming does work if the lines intersect so there must be something you are doing that is different from this. If we could see your file we'd be able to more directly help you rather than speculate as to what might be going on.

Can you describe what you actually are doing?
In 2D sketching, if you are drawing lines and arcs, you click on the ends of existing lines and arcs, and the points merge.
In 3D sketching, your first click on an existing point merges. The subsequent ones do not. You need to click on "Add Relations" and merge the points. I deliberately draw the points some distance apart so I can see what I have merged.

I have that problem too sometimes. I keep the automatic relationships turned off. I use as few constraints as possible to lock down my sketches. This helps.
