How can one edit load in Strand 7.
As an example, if I have modeeled a beam and given a load of 10KN/m, and later on want it corrected to 20KN/m how should I proceed?

The simplest way is to apply the new load in the same way you did in the first place.

Some alternatives are:
Select the beam and scale by 2
Select the beam and add 10 kn/m (rather than apply 20)
Open the on-line editor (under the edit menu) and enter the new loads there
Copy the load details from the on-line editor, paste into a spreadsheet, edit them there, then paste back into the editor
Use the API to edit the data file from a spreadsheet or some other external source (requires programming)
Run a non-linear analysis with a load factor of 2 (obviously that only applies if you want all the loads in the load case to be factored by the same amount)
