Need times for "hand finishing" stainless

I am developing a spreadsheet for cost estimating custom built, stainless steel tanks.
Can anyone help with average times per unit area (or point me in the right direction) for finishing to 0.3Ra microns (240 grit) and to 0.1Ra (320 grit) from say No.1 Mill Finish 304 or 316 plate. A typical area would be say 10 sq.mtrs.
I understand that 1.25hrs/sq.mtr. is about industry average for 180 grit but that the resultant finish can vary from 0.3Ra to 0.8Ra and 15-17hrs/sq.mtr. for a mirror finish.
Any help at all, including comment re the 180 grit and mirror times I have, will be greatly appreciated and acknowledged.
