Is there a way to customize this so that item types shows all the time for specific processes? I don't want to have to remember to add in items I need every time. It slows me down.

When you create an operation, choose drilling or countersinking or tapping. Under "Options" there is a tab for "Custom Dialog". In the item types you have options to add to the previous dialog screen. I wanted to know if there is a way to customize the operation screen for certain types of operations. For example, when I choose drilling that the "engage/retract" dialog is always there.

Yes! You need to customize the dialog of the template operation. Then each time you create a new one, you will see your customized dialog. Take a look at How to create a NX CAM custom operation template
