Does anyone have any good information that can be used for
teaching electronic fuel injection?

The Bosch Automotive handbook is a good resource for general information such as that, especially for fuel injection since they make fuel injectors.  It is usually up to date since they release a new edition every few years.  You can purchase it through the SAE bookstore online for $44... Start at www.sae.org, goto bookstore and search for "Bosch Automotive Handbook".

I have a power point presentation I could send to you. It covers Fuel Injection in great detail and contains movies that show various components in operation.

Electromotive used to have their manual for their programable ECU on their web site.  It gives info on what sensors affect ignition timing & injector duty cycles.
