What temp? That will determine how the coating holds up. Hot water requires careful coating selection.
I would suggest 2205 for the coils. Unless you are sure that your water will always be good demin and that they steam is also very pure. If there is ever a chance of impurities the 316 could be a bad choice.
And you never put a corrosion allowance on stainless steel. If it fails it will be by localized pitting and more thickness does not help. You want it as thin as possible to improve performance and minimize stresses.
