I have a custom symbol using a variety of different character sizes. When I add it to a new file however, all of the text becomes the same size. How do I prevent this from happening ?

Check the settings section at the bottom of the menu when inserting your symbols and make sure the annotation preferences is set to use definition instead of use current. That should make sure that the text size matches the size it was set to when the symbol was created.

am not able to find any annotation preferences in the dialog box.

Can you attach a screenshot of the dialog box when inserting these symbols? I don't have NX 7.5 available to me at the moment to check if the options are in that menu or not.

That looks like the dialog to define the custom symbol. The option I was mentioning is for the dialog when placing it.
