How can this be done? When I doubleclick the dimension that has become unassociative due to model changes, it brings up the dialog box, but select first/second object is greyed out.

Can this be done, or do I just have to delete out all the unassociative dimensions and start over?

pretty sure it can be done. but i don't have it in front of me to prove it. I think one of the guys at work would have been bitching about it by now if they had removed that functionality.

I can force a dimension to become unassociated, but the first/second object selection doesn't become greyed out for me...

Is the first/second object selection greyed out on all of your unassociated dimensions?
