I'm using NX 8.5. Is there a table I can bring up that will allow me to quickly see which material was assigned to all the parts in that assembly?

You can add a material column to the assembly navigator. In the ANT, right click in the whitespace to the left of the component names, choose "columns" -> configure; on the columns tab, enter "Material" in the attribute entry and OK the dialog.

as Cowski notes but:
this applies if, you have set the customer default - Gateway - Materials / mass - attributes - Part material - Create Attribute = on
( this option might be on by default in 8.5 which i doubt it was in earlier versions.)
