I am trying to design a system with a sensor that can detect when an inflatable is inflated to 2 PSI. I am trying to inflate something small, around 6 liters. I currently have a system that uses a solenoid, the compressed air, and a mechanical timed relay that tells the system when to stop inflating. The issue is that i want to make it using a sensor or gauge to tell the system to stop inflating at exactly 2 PSI.

A pressure switch is all you need. It would work best if you have a separate line to sense the air pressure from the line that is filling the inflatable.

How about sticking with the system you've already got, setting the timer to run for a little bit longer than currently, and installing a relief valve adjusted to limit the pressure to 2 psi?

The relief valve or a backpressure regulator (with sensor for verification) should give you a good level of control and validation.

It would help to know details like what the inflatable device is constructed of? What is the volume/pressure of the compressed air reservoir? What is the time period required to inflate the device? When you say 2 psi, can we assume you mean 2 psig?

Personally, I would use the approach others suggested, using a mechanical relief valve to control the inflation pressure. This is the most fool-proof and reliable approach.
