How could I control the new feature creation colour?

Actually there is no direct way to control the color of a Feature before it's created. Now you can control the color of Objects, such as Curves, Solid and Sheet Bodies, Datums, Points, etc, some of which might happen to be features. You can set this by going to...

Preferences -> Object -> General

...and selecting the 'Type' option and selecting the object type. BTW, if you wish to set the color of multiple Object, be sure to prsss 'Apply' after EACH change or else only the last change will be saved. Note that this only effects the Current Part file. Note that you can also set these Object colors in Customer Defaults.

Starting with NX 8.5, you can now EDIT the color of an existing Feature, like a Hole or a Blend. Simply select the feature, press MB3 and you'll see an 'Assign Feature Color' option.
