Incoloy 800 or Incoloy 840? Does anyone have experience which of these material is better suited (would last longer)in an application to heat tap water to create steam in small 2 to 3 gallon container?

Could you advise me why you think Incoloy 800 would be better? I did a web search looking for an anser to this quesion and did not find an adequate expaniation for why 800 is better.

The Al in 840 helps form a protective oxide at high temp but does not help at all in water.
An even higher Cr alloy would be better since your heaters will never go above 300F or so.
