Hello all,

What is the easiest way to get a flat pattern either curves or surface of a curve mesh type surface in NX?

Its just a surface (not revolved) with some holes in it.

I tried doing it in Sheet Metal but I cant select the surface in that package for some reason.

Flat Pattern command in NX Sheet Metal is not meant for flatening the surface bodies. It is used for flatening bends, flanges, contour flanges, etc.
If you want to flatten surface bodies, then you should consider using 'Analyze Formability-One step' (Analysis menu) or Metaform command (menu Insert/NX Advanced Sheet Metal). For the first, you need nx_onsestep_analysis license and for the second, you need adv_sheet_metal_dsgn license.
