Selecting a feature on screen a toolbar shows up (Containing Edit Parameters, Edit w/ Rollback...)
Is there a way to add more commands there ?

Yes. With some model on the screen with the feature type that you're interested in, go to 'Customize' and when the dialog opens select the tab titled 'Shortcut Toolbar' and then select the feature of interest using your cursor and you will see that "on screen toolbar" show up. Now you can add any command to it that you wish including user defined ones, just like you were customizing a normal tool bar. Once you've got what you want, and you leave the Customize environment, remember to save your Role so that the customization changes are saved.

So far so good, thank you John.
Now I'd like to add the "Make Current Feature" command to my contextual toolbar.
I cannot find any place on the GUI to grab/copy it from...
Any idea?

In the customize dialog (commands tab), in the categories (left side) choose Edit -> feature; "make current feature" will show up in the commands list (right side).

Note that if you right click on a feature, "make current feature" will be a choice on the pop up menu.
