You're really asking the members to teach you metallurgy 101. Why not try to study the subject first and then ask a little more focussed question?

copied below from your query:  with INSERTS

I´m a newbie on the subject, so I need some answers. Please?

WHY DO YOU NEED ANSWERS?  JUST CURIOUS?  OR DO YOU HAVE A SPECFIC PROBLEM?
How is related hardness metals with its structure, grain size and composition?

ALL OF THE ABOVE.

How can I modify the hardness of a metal?

PURE OR ELEMENTAL METALS WORK-HARDEN BY COLD WORKING (COLD MEANING BELOW THE RECRYSTALLIZATION TEMPERATURE).  THE HARDNESS IS MODIFIED TO SOFTER BY ANNEALING.  SOME METAL ALLOYS ARE SUSCEPTIBLE TO HARDENING BY HEAT TREATING.  FOR EXAMPLE; QUENCH AND TEMPER AND SOME BY SOLUTION TREATING AND PRECIPITION HARDENING.  AGAIN YOU WILL NEED TO DO SOME READING TO UNDERSTAND THESE TERMS.

How must the surface be to perform a hardness test?

SHOULD BE A RELATIVELY SMOOTH SURFACE BUT TYPICALLY NO PREP NEEDED EXCEPT IN SPECIAL CASES AS NOTED IN A RECENT THREAD RIGHT HERE.

Thanks, I really need HELP !!!
WHY DO NEED HELP?  ELABORATE!
