Hello and congratulations for this great site/forum.
I've noticed that the curves and sketches show in viewport with a greyish tone even if they are configured to show white in the Edit Object Display. Sketch Settings > Display Object Color is active for all the curves/sketches and the Sketch mode is off.
Is there a way to view the curves in the exact color you select in Edit Object Display?

Try this, go to...

Preferences -> Visualization -> Line

...and in the section of the dialog titled 'Session Settings', toggle OFF the 'Wireframe Contrast' option and hit OK.
