Our new meter located at our transformer came with an Ethernet connection point that would give us a lot of info on our PLC.
We have lots of spare #16AWG shielded twisted pairs close by the transformer jbox. Is it possible to convert a couple of pairs of this #16 and run the Ethernet signal over these cables?

You might get lucky if you can force it to run at 10MB/s: unlikely, but wouldn't cost the earth to try. At 100MB/s you have roughly no chance at all.

You will almost certainly be able to run RS-485 over a twisted pair provided the distance isn't too long and you keep the Baud rate down. As distance and/or speed increases it becomes less forgiving of cable which doesn't meet the required spec.

If you have 4 pairs available, why you wouldn't? Otherwise use ether-to serial converter

I think the latest flyer said they could put Ethernet down barbed wire. It would be interesting to demo for sure.

I Googled "ethernet over fieldbus wiring."

Make sure at least one end of your connection has a transformer coupled interface (usually built into the Ethernet jack). This is a nasty environment, what with ground loops and fault induced voltage rise.
